Ingredients
Black eyed peas - 1 can
Spinach(chopped) - 1 cup
Onion(diced) - 1/2
Tomato(diced) - 1/2
Ginger/garlic paste - 1 tsp
Coriander powder - 1 tsp
Chili powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Cumin seeds- 1/2 tsp
Mustard seeds- 1/4 tsp
Cooking oil - as needed
Salt - to taste
Curry leaves
- In a pan add cooking oil and add mustard seeds
- Add in cumin seeds
- Add and saute' diced onions, ginger garlic paste and curry leaves
- Add in diced tomatoes, salt and let it cook
- Add coriander powder, chili powder and turmeric powder
- Add in the can of black eyed peas with some water
- Mix well and add in spinach
- Let cook in low heat
- Turn off heat before it gets dry.
- Serve with rice or rotis.
