Vanpayar kaya thoran (Red beans and green banana)


Ingredients

Red Beans - 1 cup
Raw(green) Banana - 4
Onion - 1/2
Grated coconut - 1 cup
Chili powder - 1 tsp
Turmeric powder - 1/4 tsp
Garlic - 1 pod
Cumin seeds - 1/4 tsp
Mustard seeds - 1/4 tsp
Dried red chili - 2
Cooking oil
Salt
Curry leaves

  • Cook red beans with water
  • Dice bananas and onion 
  • In a pan, add cooking oil and put in mustard seeds and cumin seeds
  • Add in red chillies, curry leaves
  • Add and saute' diced onion and crushed garlic
  • Add chili powder and turmeric powder
  • Add diced bananas, salt and mix well
  • Cover and let cook
  • Once the banana is almost cooked, add in red beans
  • Mix well and add grated coconut 
  • Cover and let cook for 2 more mins
  • Enjoy with rice

Methi pakora (fenugreek fritters)


Ingredients

Methi(fenugreek) leaves - 3 cups
Chickpea flour - 4 cups
Green chili - 4 
Coriander powder - 1 tsp
Chili powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Garam masala - 1/2 tsp
Baking soda - 1/2 tsp
Salt - 1/2 tsp
Sugar - 1 1/2 tsp
Water
Oil

  • Mix roughly cut methi leaves, chickpeas flour, coriander pwder, chili powder,turmeric, garam masala, salt and sugar 
  • Add in diced green chili 
  • Add water to the mix and make a batter

  • Heat oil in a pan and add in small amounts of batter with a small spoon or with hand 

  • Fry both sides for 2-3 mins until the inside cooks 

  • Serve hot with ketchup, yogurt or chutney of your choice!

Salmon with coconut


Ingredients

Salmon fillets - 2
Grated coconut - 2 cups
Onion - 1/2
Tomato - 1
Ginger grated - 1 tbsp
Green chili - 1
Chili powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Salt
Curry leaves

  • Dice Salmon fillets into small pieces
  • Dice onion, tomato, green chili
  • In a pan, add all the ingredients and mix well
  • Cook on low heat until fish is cooked and until the mixture is almost dry with some moisture remaining.
  • Enjoy with rice. 
Tip : Adjust the amount of chili powder and green chili to your desired taste.

Gobi(cauliflower) manchurian


Hello everyone,

This is a very tasty and mouth-watery cauliflower recipe. It is an Indo-chinese recipe that can be served as an appetizer or with noodles or fried rice. This was my first time trying to make manchurian and it was so simple and easy. My family loved it and I hope you too will enjoy.

Ingredients

Cauliflower - 1
Onion(diced) - 1/2
Ginger and garlic(minced) - 1 tbsp
Green chili - 1
Bell pepper(diced) - 1
Soy sauce - 1 tbsp
Chili sauce - 1 tbsp
Tomato ketchup - 1 tbsp
Vinegar - 1 tsp
Sugar - 1 pinch
Spring onion -  to garnish
Cooking oil
Salt

For batter(to fry cauliflower)
All purpose flour - 1/2 cup
Egg - 1
Salt - to taste
  • Cut cauliflower florets into bite size pieces
  • Make batter with all purpose flour, egg and salt
  • Mix cauliflower in batter and fry
  • Fry cauliflower until crispy(may double fry for extra crispiness)
  • Set aside the fried cauliflower
  • Saute' onion, ginger, garlic, green chili and bell pepper. Do not over cook
  • Add in soy sauce, chili sauce, ketchup, vinegar and sugar
  • Let this mixture boil and add cauliflower

  • Garnish with spring onions,
  • Enjoy as an appetizer or serve with noodles or fried rice. 

Tip: Flavors of soy sauce and chili sauce may vary. Enjoy the manchurian right away after mixing or mix cauliflower to the sauce right before serving so it would not lose the crispiness,

Tuna Cutlets


Ingredients

Canned Tuna : two 5 oz cans
Onion(medium) ; 1/2
Potato(medium) : 1
Ginger and garlic(minced): 1 tsp
Turmeric powder : 1/4 tsp
Garam masala: 1/2 tsp
Egg: 1
All purpose flour: 1 tsp
Bread crumbs
Cooking oil
Salt: to taste

  • Drain canned tuna
  • Cook medium potato and mash it
  • Cut onion into small dices
  • Add a tsp of oil to a pan and saute' onion, ginger, garlic

  • Add in turmeric powder and garam masala 
  • Add in tuna 
  • Add in mashed potato and salt to taste
  • Let the mixture get warm and turn the heat off

  • Make small balls out of the mixture after it cools and make them into oval shapes
  • Make a batter by mixing the egg and all purpose flour
  • In a pan heat enough to cover about one side of the cutlets
  • Dip the cutlets in the batter and then dip them in bread crumbs
  • Fry each side

  • Flip and let cook both sides until the cutlets reach the desired color
  • Enjoy!

Spinach potato

Ingredients

Potato - 1(medium)
Spinach - 2 hands full
Onion - 1 tbsp(diced)
Garlic - 1 clove
Mustard seeds
Cumin powder - 1/4 tsp
Cooking oil - 1 tsp
Salt


  • In a  pan add oil and add mustard seeds when the oil heats up
  • Add in diced onion, garlic and saute'
  • Add cumin powder 
  • Add potatoes cut in small cubes and some water 
  • Turn the heat down and let the potato cubes cook
  • Add in cut spinach and add salt
  • Cover and let cook 
  • Serve with rice or roti

Salmon Stir Fry


Ingredients

Salmon fillet(average size) - 3
Onion(medium) - 1 
Tomato(medium) - 1
Garlic 
Ginger 
Chili powder - 1 tsp
Turmeric powder - 1/4 tsp
Coriander powder - 1 tsp 
Salt
Cooking oil
Mustard seeds - 1 tsp
Curry leaves

  • Mix 1/2 tsp chili powder, half of the turmeric powder and salt
  • Cut salmon into bite size pieces and marinate in the above mix for 10 mins
  • In a skillet, add a tsp of oil, fry the fish and set aside.

  • In a pan, add 1/2 tsp of oil
  • Add in mustard seeds.
  • Saute' diced onions, minced garlic, diced ginger(abt a tsp), curry leaves
  • Add in diced tomato and some salt
  • When the tomato slices are cooked, add coriander powder, rest of the chili powder and turmeric powder
  • Let the mixture heat up and change to a darker color(do not let it burn)

  • Add in the fried fish and mix well. 
  • Cover and turn the heat low for 5 mins.
  • Serve with warm white rice

Tip: Do not let fry the salmon for too long as it will make it tough and chewy.
You can also use fish masala if you have it handy instead of the coriander, chili and turmeric mix.

  • Mash banana and add eggs
                                              
  • Make bite size pancakes 
                                              
  • Enjoy with fresh fruits!

Overnight Oatmeal

Hello everyone,
This is my to go breakfast I take to work. Its healthy and tasty. I never really liked oatmeal until I tried this. So do try and let me know how you like it.
Ingredients

Oatmeal(old fashioned) - 1/2cup
Milk - 1/2 cup
Yogurt - 1/2 cup
Strawberries(frozen) - 3
Banana - 1/2
Maple syrup or Honey - 1 tbsp

  • Mix all the ingredients with fruits cut in bite size pieces and leave it overnight in the refrigerator.
  • Enjoy delicious and healthy breakfast the next morning.
TIP: You can add other fruits and nuts to this recipe. Also try greek yogurt for a much healthier option.

Banana Bread

This week's awesome banana bread recipe was shared to me by my sister Jenny who loves to bake. Hope you guys enjoy it too. Happy baking!!

Ingredients

Butter - 1/2 cup
Sugar - 1 cup
Vanilla extract - 1 tsp
Eggs - 2
Flour - 1 cup
Cinnamon - 1 tsp
Baking soda - 1 tsp
Salt - 1/2 tsp
Mashed banana - 1 cup
Walnuts(optional) - 1 cup

  • Cream butter, sugar, vanilla
  • Add eggs and mix well
  • Add flour, salt, baking soda, cinnamon
  • Beat well and add bananas and nuts
  • Grease loaf pan 
  • Bake zt 350 deg for 55 to 60 mins

Tip: Try substituting sugar with brown sugar.
       You can also make muffins with this recipe!

Chai


Ingredients

Water- 1/2 cup
Milk - 1/2 cup
Cardamom - 1
Ginger - size of a cardamom
Sugar - 1 teaspoon
Tea leaves - 1/2 teaspoon
Strainer

  • In a saucepan add water, milk and sugar
  • Crush ginger, cardamom and add to the pan
  • When the milk boils, add tea leaves and turn heat off
  • Strain after 2 mins
  • Enjoy with a snack!
Tip: This recipe is for one cup of chai only. Try using 1 and 1/2 teaspoons of brown sugar instead of regular sugar.

Lime Ginger Juice


Hello everyone, 
Hope everyone is having a good week. You have to try this cool refreshing juice recipe! I wanted to post this recipe before the summer ended. Let me know how you guys like it. 

Ingredients

Lime - 1
Ginger (thin and the size of a dime)
Cold water - 4 -5 cups
Sugar - a lot (1/2 cup or more)
Strainer
Blender

  • Cut the skin off the lime( take the seeds out if the lime has seeds in it.)
  • Add the inside part of the lime, sugar, ginger, water into the blender
  • Blend for about 2 mins or until all the sugar is diluted
  • Pour the juice through a strainer 
  • Enjoy!

Tip: I have tried adding maple syrup instead of sugar and it tastes really good. Try if u have some maple syrup handy!

Green Beans and Carrot Thoran

I have a special thoran recipe to share this week.  Thoran is a popular kerala dish that goes with steamed rice. Thoran can be made from almost all vegetables but the most popular ones are cabbage, green beans, red spinach, carrot, beetroot etc. The possibilities are endless. Thoran is also made with combination of vegetables. It is made with finely chopped vegetables and contains grated coconut. This green beans thoran is inspired by my mother in law who also loves to cook and tries new recipes. I had another recipe ready to be posted this week but I made this thoran this week and it was so good that I had to share.  





Ingredients 

Green Beans(one pound) - Thinly cut
Baby carrots(grated) - 12
Onion(medium) - 1/2
Garlic - 1 clove
Green Chili(split in middle) - 2
Grated coconut - 1/2 cup
Mustard seeds - 1/4 teaspoon
Oil - 1 tablespoon
Curry leaves  

  • Heat oil and add mustard seeds
  • Add in onions, garlic, green chili and curry leaves




  • Add in green beans, salt to taste and stir


    • Add in grated carrot and stir

    • Cover and let cook completely
    • Add in grated coconut in the middle and cover the coconut with the beans and carrot. 

    • Cover and turn heat off and leave it covered for about 5 mins 
    • Open the cover and mix the thoran thoroughly.

    Potato Carrot Fry

      Ingredients

    Potatoes - 2 medium
    Baby carrots - 10
    Garlic - 3 cloves
    Chili powder - 1/2 teaspoon
    Turmeric powder - 1/4 teaspoon
    Cumin seeds - 1/4 teaspoon
    Mustard seeds - 1/4 teaspoon
    Oil - 2 tablespoon
    Curry leaves






    1. Cut potatoes, carrots and garlic 
    2. Heat oil, add mustard seeds, cumin seeds and curry leaves
    3. Add garlic and carrots 
    4. Add chili powder and turmeric powder
    5. Add potatoes 
    6. Add salt and cook till potatoes and carrots are cooked on medium heat
    7. Turn to medium high and let fry a little in the oil.

    Tip: Cut potatoes in bigger size than carrots as carrots take longer to cook.

    Beetroot Kichadi



    Beetroot Kichadi


    1. Grate one beetroot
    2. Blend half cup of grated coconut, small jeera(cumin seeds) and mustard seeds
    3. Heat oil, add mustard seeds and sauté half an onion, a teaspoon of grated ginger and one green chili.
    4. Add grated beetroot and let it cook. 
    5. Add salt to taste
    6. Add a cup of yogurt once the beetroot is cooled off.
    7. Garnish …with curry leaves.
